Title: Temperature reading

Is it normal for temperature reading to fluctuat for eg I was going about 100km it went up to 90 then when I coasted to stop went down to 70 odd?

Never seen such low temps on my LC. Normally at about 83-84.

Once pulling out from a farm road onto the N12, I caught with my eye that is was steadily rising from 90 up to 99. It then very rapidly dropped down to 83 like in 5 seconds or even less. This all while I was doing about 120 and  I did not coast as I wanted to see what it will do and that is what happened. Was also weird to me... Should maybe research how the thermostat operates.

Rapid fluctuating temperatures is either some air in the cooling system or a bad electrical connection to/from the temp sensor somewhere.
The 800 engine easily gets air in it, bleeding this is a must.
Dunno the elephants too well in this regard...

I travel 25 km's to work, in the Kalahari, and what I have found is that the engine and gearbox needs to warm up before it will stabilize.
For example: in the mornings with an outside temp of 20 degrees, it will fluctuate between 95 and 83 in the beginning of the trip. The fluctuation will decrease and at about 20km's it stabilizes at 84 while doing 120km/h.
In the afternoon when it a lot warmer say at 38 degrees, it takes about 5 km's to stabilize at 86/87.
And because the aircon is not working, I sometimes ride like I stole it to get to the cold beer and swimming pool, the highest that it ever stabilized at was 90 degrees.
Slowing down into town it will peak at 100 when the fan comes on and the fan will switch of at 95.

Fluctuation is normal if within specs.  Somewhere between 75 and 100.

Thermostat opens at just under 100 degrees.
Fan kicks in at 100 degrees and switches off at 95.

Both the above will bring about a reasonably rapid drop in temp.
