@Wooly Bugger  -  that Almazan knife will be OK as a chopper of large things (as in "vleisbyl"), but I think you will use it more often for a lot of finer work. When you are cutting and chopping smaller things, e.g. onions, you'll most likely hold the knife like a chef (see pic below). The chef's hold gives you lots of control over the blade. However, if you use this hold on the Almazan cleaver, your fingers are going to complain where I highlighted the contact areas on the picture. If I cook something that requires a lots of slicing and chopping, I sometimes get a blister on my first finger (the one on top of the blade). To cut a long story short, I worked with @Exploratio to make a handle that fits my hand perfectly (see second pic).  Maybe work with your local knife maker and do a "custom fit" - like the golf pro's do.

Must say, when @roxenz tried to explain what he needed, I just gave him a blank stare. But what a ingenius design. He must patent it.

for this kind of chopping and slicing - also consider a classic santoku style knife.  i have one on my christmas list

Sent you a PM WB. If you decide to buy something online though, be careful of fake Almazan knives. There's a Youtube video explaining this. The fakes do seem to be quite good though  :biggrin:

Avoid the Pakistani damascus knives at all costs though. You'll never get them sharp. It's impossible to make decent pattern welded knives for the prices they ask.

@Wooly Bugger  - ek het my cleaver van @Exploratio gekry vandag. Voel skoon aangedaan oor die man so baie moeite gedoen het om die perfekte cleaver vir my te maak!

JY moet kom kyk, maar meer belangrik, jy moet kom voel hoe vat daai mes. Ek dink dit sal so paar glasies rooi vat vir jou om oor die gevoel en balans te kom...

Baie lekker, Paul. Die handvatsel is groot sukses. Die mes self is redelik groot, met n swaar lem. Dit is uitstekend vir medium tot swaar werk. Opsny van kilos wildsvleis maak my hand nie moeg nie. Fyn kerf-werk verg egter konsentrasie: die skerp lem sal maklik n vingerpunt tot die dis byvoeg. So ek dink alreeds om n kleiner en ligter metgesel vir hom te laat maak. Dunner lem en net 70% van die grootte. Ek het reeds n briljante Buck paring knife, so n medium grootte veeldoel mes (ligter as chef's knife met skerper punt) en dan sal ek tevrede wees met messegoed vir die res van my lewe.  :biggrin:
PS. Dis n lekker gevoel om so n kwaliteit stuks gereedskap in jou hand te hou. Partykeer tel ek die mes op sommer net om dit vas te hou. @Exploratio het regtig briljante vakmanskap gelewer.
