Your polls are a bit vague for me regarding tar or dirt road.
110km/h on most dirt roads is not slow.
I am happy to sit at 110 - 120 on dirt roads all day but ussually travel dirt roads a bit faster.
Try and plan my trips beforehand to minimize the dreaded tar roads.

60-80 on the mostly sand roads here, and 100-110 on the roads, the ubiquitous warthogs keep me in check!

If you don't have to concentrate you are riding too slow.

Highways - 120/130 odd
Byways - 100 or so
Gravel highways - just enough to make it interesting - 70/80 or so?
So basically too slow for some of my mates.....!

This one is difficult to answer. Depends on the mood and objective off the day. I pretty much do all the above.

Sometimes happy to cruise and enjoy the scenery and love going all out when I get a chance.

Tar I never exceed 160, but mostly do on average around 120.

Gravel, I would estimate 100 tops, but mostly 40-60. We always have to watch out for wild animals and buck that roam around freely.

Watter spoed ry jy dan as daar oinkers in die omgewing is? Selfs teen 100 gaan die k@k hoog spat as 'n varkie homself voor die voorwiel opoffer...

I normally do 140 - 160 on big tar roads, and highways.
Dirt Highways, normally 100 - 120, depending on the width of the road reserve and how clean it is cut.
Normal smaller dirt roads - 60 - 80
Smaller dirt roads, railway line tracks etc - 40 - 60

There's no 50-60km/h option.  ;)

No wonder I ride alone.
