what is the law regarding driving without number plates???

So... I have my new bike and I am thoroughly enjoying this initial period without plates!  I'm curious to know if I leave it off, what is the penalty?  I don't mind paying a fine once or twice a year if it means I will get away with no e-tolls and no fines.  I don't intend on speeding around everywhere but I do get the inevitable 80 in a 60 zone fine.

can I be arrested or is it just a fine?

I've been through several road blocks in the last few days and I never get stopped so I'm getting quite confident now that I just don't need plates  :ricky:

what's your thoughts / experience with this?
