What do you see in a "Cafe racer" ?

When I started buying my first couple of big bikes like Suzuki GT750, Yamaha RD350B, etc, they were often turned into Cafe racers.
My idea of a cafe racer is a bike that is standard, but already showing potential as a fast machine, then to be converted to look as close as possible to what Barry Sheene, etc. rode at the time.
My best ever Cafe racer I built was a RD350B aircooled twostroke twin, because out of the box they handled well with a very quick engine.

To take something like an XT600Z, XS650, Honda CX500, etc., no matter how pretty they turn out, something is lacking. It is the true GP spirit.

I am of course a strong believer of form following function.
