Crab, your Mom's recipe is more quiche than Mac 'n Cheese.
(The egg sets the milk into a savoury custard.)

The usual sauce is made with butter, flour, milk and cheese.
(A bit of a problem if you are lactose intolerant...)

As for families with vegan / veggie / omnivore combinations, make the core dishes vegan ,
add any side dishes or trimmings after serving the veggievores that omnivores like and Bob's your uncle.

Vegetarian Potato + Celery soup

Ingedients:
1 Med Potato
1 Med Onion
2 sticks celery (leaves on)
1 lt vegetable stock
Fresh parsley
20ml oil
Black pepper
Salt to taste

METHOD:

Chop onions and celery sticks finely.
Fry them in the oil until caramelised.
Add stock and cook on low heat.
Grate the peeled potato into the liquid.
Add parsley and cook until the potato is cooked.
Add cracked black pepper and salt to taste.

(This soup can be eaten straight after cooking.)

Spaghetti Bolognaise recipe Butch.  I have made it a few times and it's great.

a schweet hummus:

canned chick peas
lemon zest and a bit of its juice
garlic
some banditos pickled jalapeno
tumeric
touch of cayenne
parsley/cilantro

all in a blender buzz buzz.

Lekker as a dip (scoop with cucumber) or spread on rice cake or whatever
