Temperature question

Anybody experience extreme temperature fluctuations? I have replaced my original speedo with a vapor so I have the digital temp display. On a relaxed open ride it sits around 74-76 deg. Normal town 85-88deg and in traffic 93-96 deg. Now it stands to reason that I cannot say how accurate the vapor is but fact is there is a huge difference. It does climb very quick, cold start to me putting on gear is a climb to 60deg. If I park and let just the fan run it falls 10-15 deg in 30 odd seconds.

For what it's worth, a quick update.... I took a slow ride today, riding shotgun to the sandbag and her baby bike, in town we stayed between 85-90 deg. Open road at a constant 60-65km/h we went up to 88 deg, at 65 to 75 this came down 81-83 deg but would rise to 85/86 deg almost instantly when I slowed for cycles and speed bumps. At 80-100 it came down to 78 deg peaking at 81.
