how to pack onto bike for long trip

Done quite a few long trips on the bike now (3-4 days), with camping and always packed the same way. North face kit bag with nearly everything in it. it has worked quite well up to now, but getting a little gatvol of unpacking a moerse bag anytime you want some thing. Been think about going the pannier route but not sure if its worth the money and effort.

One thing that worries me is falling. Recently did a trip where we hit major sand and had a couple of spills. all at very low speed, but not sure if the panniers will get damaged. Worse still, damaged so they are no longer functional in the middle of the sticks!

Looked at soft and hard bags. Maybe soft bags will be more forgiving at a very low speed fall, not sure.

So what would you guys recommend? Soft or Hard, which brands etc.

Also how does packing effect bike handling?
