Speed rating on tires

I am in the process of upgrading to the KTM 1190 R and would really like to upgrade the tires but have stumbled upon a little issue that I am sure a few of you could help with.  All of the "Offroad" type tires like the TKC80 are only rated to around 180km/h and I was just wandering what are the best tires to put on that can still handle the occasional high speed run? I do like to ride more dirt so the tire needs to be capable offroad but when its onroad I would like to still give her a little throttle. What tires are you guys running and what are they like at speed on the grey stuff.
