Now before I get crucified, hear me out - Counter steering is THE ONLY WAY to steer if the bike moves at 60km/h or faster.  You have no choice.
You say "What about leaning?"  I say get on the bike at about 80km p/h, take your hands off the bars and only lean into a turn... You will be able to slowly alter the bike's course, but not so that you could effectively steer it.

One use counter steering automatically while riding - to prove this, get into some twistys and take your left hand off the bar.  With a right-hand turn coming up, what do you do? You push your throttle-hand forward a bit to get the bike to lean to the right.  Same goes for a left-hand turn - you pull on your throttle-hand to get the bike to lean towards the left.

Counter steering is not a bloody technique you can use to turn - it is the only way to get your bike to lean into a turn.
