I was lucky enough that youtube reminded me of the Britten V1000 today. This has to be one of the absolute most iconic bikes to ever be built, both because of the spectacular performance, but also because of the back story.
I'm sure all of the older guys on here are familiar with this. John Britten designed the entire bike himself and then built it in his garage. He didn't build it from parts sourced elsewhere, he literally built it all, just about every single part, engine, everything from scratch, at home. This is an absolutely amazing story and we can only wonder how far this would have gone if he was still alive today.

The V1000 weighed in at 138 kg (that’s just 4 kg more than the KTM 200 Duke), and with 165 bhp, that equaled a magnificent power-to-weight ratio of 1.19 bhp/kg. Yes, current MotoGP racers and even some streetbikes do better than that but again, this was in 1991.
