Cafe Racer by Roland Sands: ex-racer cum custom bike designer. 
This one is based on a 2-stroke CR500.


I don't think these can be called Cafe Racers, but here are some of his other creations:
"No Regrets" which won him the 2006 Discovery Channel Biker Build-Off.


"KRV5 Tracker" with a Team Kenny Roberts KRV5 MotoGP engine!
