Al die what-what om die res mooi snitte te maak op die lam. Oond gebak saam met sampioene, bedien met knoffel aartappels en tamatie.

1.5kg pork belly. 4 hour slow roast on the Weber. No need for a knife, just pull it apart with a tongs.  ;)

I'm living in Abu Dhabi for the past year, without the facilities to cook stuff  :(  :snorting:
Can't wait to get back to SA in a week's time  :lol8:

I have tried a LOT of methods. Some recipes are hard work but very nice, with veg and 5 spice (Jamie Oliver etc.) but the last one I did stood out.
I don't have the recipe with me but I remember
0) Pour boiling water over the skin, holding the meat at an angle. Wipe dry
1) Score the skin
2) Put in foil but keep the top open
3) Pack about 1 cm of rock salt on top, refrigerate few hours
4) There was possibly wine and things you add here.........no oil
5) Put in pre-heated oven at FULL BLAST for about 10 - 15 min
6) Reduce to 160 (or 180?) for the rest, 90 min or 2 hours or so, depending on size
Can't remember when you peel the salt off, but it comes off in a layer.

Heuning en sriracha lam bedien met jasmyn rys. Was nogal lekker en ek sukkel gewoonlik om die oosterse smake reg te kry.
