I will agree fully - I replaced the clutch cable on my previous Dakar, too. This is my second and I bought it because I enjoyed the first one so much.
I didn’t have radiator issues, but I did replace the fuel pump (inside the tank) and the fuel filter situation (still don’t fully understand it...
The motor has not given me a moment’s concern. I’ve seen people speak of 200,000km and more. I would do serious checks and balances on any motor I wanted to take me that far, but genuinely I don’t think you need to worry about the motor.
The seals and maybe the water and fuel pump, and check...

Where you do want/need OEM, I got fantastic service from Cedar Isle Motorrad, even when they had to bring in stuff from Germany (takes a few days/weeks).
The one pic with the wheel caps removed looked like black centre caps might be a good look, Grizz. But then with the repainted wheels on, they look fantastic! 🥳
Eish that rust underneath though. But I have no doubt you’ll deal with it very successfully.
