I've been using ATG pannier bags for years, and loved them - water proof inner bags, no need to remove the panniers when stopping overnight, good quality, etc.
They were unfortunately destroyed during a recent trip and the plan was to replace them with the same.

Walked into my local BMW dealership and spotted the GoGravel bags. While it's similar in many ways, they have added some very ingenious touches, such as the way they fold flat, and the fact that you're getting proper duffel bags with valves as inners.

The modus operandi has always been to mount the bags before a trip and never remove them. If we're staying over for more than one night and doing outrides or whatever the bags stay on. The fact that these can fold flat should make a nice difference, and then you've still got a very nice duffel bag for other, shorter trips.
