Thought I'd just mention - commuting at 130kph with standard sprockets (15 - 47) let's the bike rev a little high at 5500rpm.
Took a gamble with 16 - 45 and a new chain and doing 130kph just below 5000rpm

I have to admit, 5th gear full throttle from 110kph up isn't as rapid but still not lousy. Using a gear lower in most places now but the 700 has so much grunt from 2800rpm that it's not a bother. Everything rides nicely. I was worried about pullaway suffering since  1st gear is so tall already but it really isn't much worse than standard.
All in all, the drop in rpm at cruise is really worth it to me - even at 140kph the bike doesn't start it's buzzing yet and doesn't feel like it's being abused.

Will let you know about fuel consumption one day :)
