Greece in Oct 2017

We will be married for 20 years and are planning a motorcycle trip in Greece in Oct 2017.  It started out as a trip to Italy, but I was not able to convinve her entirely.  She is terrified of flying.  Anyway, viviting Greece is a lifelong dream of hers, and did the trick.  Any advice would be welcome.  Flights are particulary long.  We will be there for just over a week.  We plan to book the first night only, and the rest we will make up as we go along.  We like quieter places, but will visit the tourist attractions as well.
