Help with soft luggage

So I've been convinced that soft luggage is the way to go.....my problem is that most of the soft panniers available locally have a strap or Velcro type belt that goes over the pillion seat....well that's going to be a challenge considering I nearly always have the Mrs on Pillion.  YouTube shows great alternatives like the Giant Loop Round the World, the Kriega Overlander or even the Givi Canyon GRT709 with each soft pannier mounting on to its own bracket.......but who stocks these locally? Seems they're only available offshore.......or am I wrong??
