I would get hold of Chris at Flying Brick in Cape Town , he has a really big selection of new soft bags, also has some hard panniers if that's what you looking for.Chris also has all the other gear needed to kit out the F800GS , I do dealings with him for my bike , service is more than better, really goes out of his way to help one out.
When you get in town let me know, I can help out with fitting all your kit.
I'll post some pics of my bike at a later stage.
