Off Road Training - Western Cape??

Can any one recommend an intermediate off road training course in the Western Cape?  I'm starting to come to the conclusion that I really don't know what I am doing.  I've cracked ribs trying to ride sand, and  dropped my bike in a water crossing and nearly lost it this weekend when my bike started fish tailing.  (The list is longer but lets leave it at that for now)
