Found article (link below) which I found informative on riding bikes offroad.

In the article reference/advertisement is made to Raw Hyde. There is a youtube video of about 1hr 30 min which I downloaded which is also informative.
I have not attended an offroad academy but I guess what is covered in the video is what is done at offroad academy's typically, IMO at least.
