Riding Scotland / Whales / UK

The miss wants to go visit family in the UK from Mid Dec through to Mid Jan which is the only time we can get leave or it would rather be done in Summer.

While she flaps chick talk I was thinking of either hiring a bike or going on a tour for a week through Scotland, Whales or the UK, my concern is that it will be in winter and judging by last years snow storms I am wondering if it will even be possible,

Has anyone got experience riding there in Dec / Jan.. any thoughts
