advice - matte black / satin black

i want to do my bike matte black and grey colours. i am a complete moron when it comes to spraying, so need some advice. which is better, matte black or satin black? if i decide to go the matte finish, would it be ok to do a satin clear coat over the black? Also, perhaps do the black in matte, then the clear coat in satin?

i could ramble on for yonks. HELP with some tips and advice please.
