Aftermarket pipes, pros and cons

As many of you know, I am now the proud owner of a 2005 Transalp.
I really love this bike, my only complaints are that the standard pipe is too quiet and its a little heavier on the juice than my Funduro was.

I am wanting to fit an aftermarket pipe (probably a scorch) to fix these 'problems', however, after having spoken to a few people I have had mixed feedback.

I have limited knowledge on the matter: what I understand is that aftermarket pipes (apart from being louder) let the engine 'breathe' better resulting in less back pressure. This in turn lets the engine rev easier, producing more power in some cases and also potentially increasing fuel economy. Is this correct?

I have heard that after fitting a pipe the jetting has to be adjusted, what is this and how and why must it be done?

To get the full benefit of a pipe, should the cat be removed?

Are there any negative effects of adding an aftermarket pipe? Is it bad for the engine/bike in any way?
