December trip planning

I am planning to ride from PTA to PE via Snow Valley (ish) around the 20th of December. I want to keep my plans as loose as possible so that I can do as many nice roads as I can in a day and then find a place to stay. Is it usually easy enough to find accommodation, either hostel or camping or is it advisable to book in advance for that time of the year? I am talking places like Barkley East, Dordrecht, Elliot, Ugie.

EDIT: PLANNE IS AS VOLG

Lyk of ons van die 19e tot die 23e gaan af ry Mosselbaai toe. Slaap die 21e in Addo by CFT. Het een ekstra dag by gesit om die afstande korter te maak van Addo af na Mosselbaai toe en om hopelik Swartberg en Prins Alfred pas in te pas. Dan is ons van die 26-28e in die kaap en Sederberge saam met Carrots en dan weer terug Mosselbaai toe.  Nuwejaar by Veldbrand. Dan van die 2e Januarie tot die 5e terug PTA toe, hopelik via Lesotho
