Renthal Bars, Fat Bars etc

I would like to know why and what the benefit is to changing the stock handle bars to one of the after market type? I've never done this on any bike that I have ever owned, but I see that it seems to be popular with DS riding. Is there something wrong with the stock bars, or do the after market bars improve the handling or whatever of the bike? What is the actual reason for changing the bars?
